Turnip is a herbaceous plant that produces rounded roots with a white and crunchy pulp. It has a strong flavour, sometimes sweet but even slightly spicy.
Before using it, the turnip must always be peeled; it can be eaten raw (the younger ones), boiled, seasoned with oil and lemon, or cooked in a pan and au gratin in the oven. It is also an excellent ingredient for rustic soups.
