Smoke

Smoking is a process in which certain foods are subjected (cheeses, hams, fish) which thus take on a more or less strong smoke flavor. For the operation of smoking, woodchips and sawdust of softwoods are used which, in slow combustion (without flame) release smoke. Smoking also has the purpose of keeping foods longer and is one of the oldest preservation methods.
