Rocket is a herbaceous plant, both spontaneous and cultivated, which has lobed and slightly rough leaves, dark green in color and with an intense aroma.
Rocket salad is not a real salad, but a plant that belongs to the cruciferous family, the same as radishes and turnips, characterized by a spicy taste. Its aromatic and intense flavour makes it the most popular cut leaf vegetable in Italy, for this reason it is cultivated all year round in protected cultivations and sold ready to consume in bags.
The rocket is grown in open fields (especially in Puglia) and sold loose in bunches. In the kitchen it is used raw, alone or to flavour mixed salads, but also as an ingredient for pesto or cooked in fillings, soups and omelettes. It is great even with meat, fish and sauces. It can be kept in the refrigerator for a couple of days, wrapped in a paper bag.
