Radicchio is a variety of chicory that produces compact rosettes with red or variegated red leaves and a white rib. The most known types of radicchio are the Chioggia radicchio, with a large and round head, and the Treviso radicchio, with an elongated and thinner head.
Excellent in salads alone or mixed with other varieties, it can also be grilled or used to flavour risotto.
