The pine nut is a seed contained in the pine cone, from which it comes out when ripe. Oblong in shape and about 2 cm long, it has a hard, dark brown shell, inside which there is a small oval and thin almond of ivory white, with a delicate flavour and a slightly resinous scent. It has a high fat content.
The pine nut is used in cooking both for savoury dishes and desserts; it is used for example to prepare pesto, fillings and sauces.
