Granita is a grainy preparation similar to sorbet, which is obtained by freezing fruit juices or other liquids, such as low-sugar coffee or tea, in ice trays or in another cold-resistant container, then placed in the freezer. During cooling, the mixture must be repeatedly stirred to break up the ice crystals that form gradually, in this way the blend will remain fine and homogeneous. If desired, it is also possible to freeze the blend without mixing it to then crush it in the mixer.
