Danablu is a Danish cheese made with cow's milk, which is characterized by a whitish rind and blue paste with greenish hues caused by the development of mold. It is similar to Roquefort but spicier. Its forms weigh about three kilos and have a diameter of 20 cm as well as a thickness of about 10 cm. Danablu is an excellent table cheese (about 45% fat content), but its strong flavor makes it suitable also for sauces.
