Buridda is a typical Ligurian fish soup that can be prepared with one or several varieties of fish. An old Ligurian recipe claims that the buridda should be prepared exclusively with stockfish, cooked in a sautéed vegetable with the addition of walnuts, bay leaves, wine, and chopped potatoes. The mixed "buridda", on the other hand, also includes scorpionfish, smooth-hound, conger eel, cuttlefish and shrimps, shi drum, angler, mullet, and brown meagre.
