The bra cheese is a semi-fat pressed cheese, produced in the Cuneo area and in the province of Turin with cow's milk, sometimes added with sheep's milk. It is prepared in large cylindrical shapes that reach up to 16 inches in diameter, with a height of about 3 inches. There is the fresh type (of only 45 days) and the seasoned one (aged at least 6 months) which can be used as cheese to be grated. The paste is ivory-white, with small holes in the fresh type, while it tends to yellow in the seasoned one. The rind is smooth and varies from light gray to dark yellow, depending on the seasoning. The fresh one has a delicate flavor, the aged one is very savory.
