Blini is a small crepe of Russian origin, similar to pancake but with a different texture; in fact, it is prepared with white flour and buckwheat, plus a pinch of yeast that makes it slightly swell during cooking. Blini is usually served with sour cream or to accompany caviar and smoked salmon.
