Béchamel sauce seems to derive from Bechameil, Marquis of Nointel and master of the house of Louis XIV. The authorship of this famous white sauce has also been claimed by others: by a certain Duke of Escar, an old colleague of the Marquis, and by a court cook who would have invented it by dedicating it to the Marquis himself. This sauce has always been a great protagonist of both national and international gastronomy.
