Bagnet

Piedmontese term that means sauce and refers to two preparations to be served with boiled meat: the green bagnet (made with plenty of parsley, anchovies, oil, garlic, breadcrumbs, vinegar) and the red bagnet (a tomato sauce, scented with chilli and vinegar, cooked for a long time). Its sour taste is corrected by adding a little sugar.
