Term of international cuisine that indicates a type of cold preparation, specially reserved for fish, crustaceans, and small game. In Italian is called "bellavista": this word is the literal translation of «Bellevue», name of the castle of the Marquise de Pompadour, where the noblewoman received the Sun King and prepared extraordinary delicacies with her hands.
A dish "in bellavista" consists of a fish, a crustacean or a bird wrapped in jelly and variously decorated with vegetables, slices of hard-boiled eggs, mayonnaise, parsley leaves.
