Finanziera

The finanziera is a typical dish of Piedmont, based on giblets and offal such as livers, sweetbreads, brains and veins. Sometimes it is also enriched with truffles. Finanziera is usually used to fill vegetable flans prepared in donut molds or to fill vol-au-vent.
