Almond pastry is a type of dough prepared with almonds, grinded in a mortar or mixer, with the addition of sugar and glucose syrup. It requires a rather long process, but a certain amount can be stored in tightly closed jars in a cool space (not in the fridge).
The almond pastry is used to cover stuffed cakes, but also to make small desserts. It can be even colored with special food dyes or liqueurs.
